One man, one cart, and a freezer full of paletas made the slow way.
Yellow Cowboy started as a side hustle and stayed one on purpose — small enough that every batch still gets made by hand. Fruit gets cut the morning it's poured. Nothing sits in a warehouse. If a flavor is on the cart today, it's because it was worth making today.
You'll find the cart wherever people are already outside: parks, block parties, farmers markets, the end of a long hot afternoon. Flag it down, pick a flavor, and get on with your day a little cooler than you were.
